Wesley True – Executive Chef/Partner
Wesley True is a graduate of the Culinary Institute of America in Hyde Park, NY. He has trained and worked under many well known, notable chefs such as Gordon Ramsey, Bobby Flay, Marcus Sameulsson, Patricia Yeo, David Bouley & Cesar Ramirez. Chef True has been nominated for the James Beard ‘Best Chef South’ 2011 & 2012 for his work at TRUE in his hometown of Mobile, Alabama. Chef True joined the Bald Headed Bistro in August of 2018, and is excited to bring Cleveland and the surrounding areas exceptional, thoughtful and focused cuisine in a beautiful lodge inspired setting.
As a contestant on the Emmy Award-winning reality show, Bravo’s Top Chef, Chef Wesley showed his skill, winning fans across America with his cooking skills and personality. His work has also been featured in a variety of publications, ranging from Garden & Gun and Southern Living to USA Today, Shape, and Cooking Light.
